Tomatillo Salsa & Guacamole - I MADE IT!!

In my post on Bountiful Baskets (directly below this post) I talked about a Mexican pack. Unfortunately I didn't take a picture of what was in it, but it had 2 bunches of green onions, a huge bunch of cilantro, 10 tomatillos, 6 jalapenos, 5 limes, 4 avocados, 1 garlic bulb and 2 Mexican squash for $6.50. I call that a great deal. I went online to www.allrecipes.com (thank you Cathy), found a recipe for tomatillo salsa and made it today. I told you I don't cook a lot so maybe you're saying ... uh ... okay ... whatever. But for me it was very exciting, EASY and delicious. I also made guacamole for the first time - equally divine.

TOMATILLO SALSA
10 tomatillos, husked
1 small onion, chopped
3 cloves garlic, chopped
2 jalapeno peppers, chopped
¼ cup chopped fresh cilantro
salt and pepper to taste

Place tomatillos in a nonreactive saucepan with enough water to cover. Bring to a boil. Simmer until tomatillos soften and begin to burst, about 10 minutes. Drain tomatillos and place in a food processor or blender with onion, garlic, jalapeno peppers, cilantro, salt and pepper. Blend to desired consistency.

And if you made it to the bottom of this post and are still reading AND are interested ... yes, Doug ate it too and liked it. Paige asked me if I could tell him there was onions in it. I said, "Sure." We had crockpot chicken wraps tonight ... mmmmmm.

That really DOES look good, Shauna. You'll have to send me the directions on the chicken wraps too. Those sound really tasty! I wouldn't mind trying them.

No recipe is needed on the wraps. I just cook frozen chicken in the crockpot with lemon pepper or other herbs and 1/2 cup water. When it's done we shred the chicken and put it in a tortilla with whatever we like ... cheese, beans, lettuce, tomatoes, salsa, guacamole, sour cream.
